Ferme Ouellette Farm is a small family-owned and operated farm. Our products are only available at particular times of the year and in limited quantity, especially our chicken meat birds. Our business is run with traditional "old fashion" ways of farming which put more importance on the natural well-being of livestock instead of financial gains; QUALITY instead of unnatural quantity.
On our farm, you will find a specific mixed breed of cows which produce tasty yet lean meat, wonderful for the pallet as well as the body. The meat has a "reasonable" amount of marbling, which, as you know, is fat. The higher quantity of marbling, the fattier the meat. We decided to combine Hereford (dark brown with white face) and Charolais (pure white) breeds to create a wonderfully tasty yet lean meat. That explains why you will notice some cows are pure white, others dark brown, and others a light brown.
Instead of selling beef by quarter/half/full, we sell by individual cuts. All beef is from our cows, raised right here on the farm, free of hormones, chemicals and genetically modified organisms. Our cows receive the best of care and enjoy good and happy lives on pasture - they are healthy, vibrant and disease-free.
The beef is processed at a local facility which is provincially regulated and inspected at regular intervals. The cows are treated humanely, with respect, and without stress or humiliation. All processing and packaging is performed at the butchering facility. The meat arrives back at the farm frozen and packaged in traditional brown butcher’s paper, ready for sale. Please note: We submit instructions for the beef cuts but it is the professional butcher who makes the final decision. Until we take inventory of the cuts received, we can only tentatively predict the cuts and weight to be available for sale.
Our chickens are raised in full liberty (not confined in any ways) which may be different than "free-range". During the day, they are free to go where they want, eat fresh grass and bugs in the full sunshine. Since these birds exercise freely every day, they are extremely lean and at their normal/natural weight (i.e. much smaller than what you may find at the grocery store). They are the truest heritage meat birds, raised the most natural “old-fashion” way. However, with this total freedom comes the lack of predator protection and sadly, some chickens fall victim to those but it is a risk we are willing to take in exchange for the birds' quality of life which is reflected in the quality of meat.
The day-old chicks are received in June from a provincially-licenced hatchery and once fully grown, they are processed at a local facility which is provincially regulated and inspected at regular intervals. The processing date (usually in September) is confirmed in July.
If you wish to purchase chickens from us, we take pre-orders with a $5 deposit per bird but ONLY until the end of April every year. In May, when we place the order for the day-old chicks, it is very difficult to change the number hence the need to get your orders by end of April.
